Chicken Salad Sandwich

Hi friends! Earlier today, I posted the article for cooking whole chicken in a slow cooker.  There are various meals you can use the shredded chicken in, but today I’d like to share one of my husband’s new favorite meals.  For his work lunches, I usually send him some sort of sandwich, and this is now his new favorite sandwich.

I don’t use exact measurements for anything in the recipe, but you can easily eyeball how much you need.

First, shred enough chicken for however many sandwiches you are making.  I’d say, about 1/2 cup of shredded chicken would be good for 2 sandwiches.

Chop part of an apple into small pieces.  If you are making a large batch of chicken salad, you will probably need the entire apple.

If you like hard-boiled eggs, chop 1 or 2 eggs up, and throw it in the mix.

Add about a tablespoon or two of dill relish.

Add a few crushed Saltines to the mix.

Add about 1/2 cup of Miracle whip and mix all of the ingredients together.  Now just throw it on a sandwich and you are ready to eat and enjoy.  This can also be lovely as a snack on top of Saltine crackers.

Lunch Ideas For a Police Officer

Hi friends! My husband is a police officer and he doesn’t have a lot of time for eating.  He can eat whenever he wants to, but he is always on call, and he needs to have something that is quick, easy, and not messy on hand.

When he was in the police academy it was so easy to send him lunch because he had a microwave on hand and I would send the dinner leftovers with him.  His classmates were always jealous :-)

Now that he doesn’t have access to a microwave, my options are limited.  A lot of the fast food joints in town offer free food or discounts on their meals for on duty police officers, but I really don’t want my husband eating fast food.  Thankfully, he doesn’t have a problem with the simple lunch I pack him and he also enjoys eating healthier foods.

In this lunch here we have a turkey and ham with avocado slices wrap, almonds,  grapes, carrots and celery.  I will also sometimes pack him a banana crumb muffins, brownies, oatmeal raisin cookies, granola bars, etc.  And yesterday he requested a tuna fish sandwich and that worked out well while driving.

I’m having trouble coming up with more lunch ideas and the only other thing I can think of is a pasta salad.  If you have any ideas I would love for you to comment and share with me please.

Frugal and Simple Lunch

Usually, we have leftovers for lunch, but since the only cooking I had done over the weekend was for Christmas dinner and we had just went grocery shopping, we didn’t have any leftovers to eat (this was on Monday BTW-I’m just now posting this picture).  Unless of course you consider sugar cookies and brownies to be leftovers ;-)

My husband is a police officer and he doesn’t have access to a microwave, so he typically eats sandwich stuff for dinner (he works at dinner-time).  So we always have sandwich meat and stuff for sack lunches in the refrigerator.

I’m not a very big bread person, unless it’s banana bread, so I enjoyed rolled turkey slices, baby carrots, grapes and cheese cubes.  Simple and it took me less time to prepare than driving to McDonalds for dollar menu items.

My husband’s plate:

He didn’t get cheese cubes because he had cheese slices on his sandwich.

If you are looking to save money, remember, a packed lunch can be simple and delicious.
