Hi friends! I shared earlier that I had successfully cooked the whole chicken and was ready to use some of the shredded chicken for our dinner tonight.
This is a super-duper frugal meal. It might not be the best tasting choice, but in terms of finances, this will help stretch your budget. And I think it tastes pretty good for such a cheap meal. The recipe calls for about a cup of shredded chicken (you can shred a chicken breast, split chicken breast or whole chicken) but I decided to stretch my budget even more by using half a cup instead of a full cup of chicken.
Step 1: Cook your pasta and drain. I didn’t take a picture but I used whole wheat noodles.
Step 2: Mix all ingredients together (shredded chicken, pasta noodles, cream of chicken soup, butter, and milk).
Step 3: Spray your casserole dish with cooking spray and transfer mixture to casserole dish. You can use a 9 x 13 dish but I wanted to use my favorite casserole dish
Step 4: Top with crushed saltines. Isn’t this easy?
Step 5: Bake in a 350 degree oven for 45-60 minutes (My casserole was ready in 45 minutes)
Serve and enjoy with a side salad or mixed vegetables.

This recipe makes about 6 servings (depending of course on how much your family likes to eat). Total per meal = .62/serving

Chicken Noodle Casserole Recipe

1 cup shredded chicken

1 12 oz bag of whole wheat egg noodles (I used the Healthy Harvest brand)

2 small cans of cream of chicken soup

2 Tablespoons butter
-
3/4 cup milk
Cook the pasta and drain. Mix together chicken, pasta noodles, cream of chicken soup, butter, and milk.
Place in a sprayed casserole dish or 9 x 13 dish and top with crushed Saltines.
Bake in a 350 degree oven for 45 to 60 minutes. Serve and enjoy!
